10 Easy-To-Make, Healthy, and Simply Delicious Breakfast Ideas

Are you running out of ideas on what to have for breakfast, too?


Staying at home might give you some more time every morning to prepare breakfast compared to regular working days. Especially now when in quarantine, I learned to take enough time for breakfast in the morning since for me, breakfast is the ultimate start of my day.


Listed here are nine of my personal favorite recipes for a healthy, delicious, and quick-to-make breakfast. The quantity of ingredients is written for 1 person only.


1. OATMEAL WITH FRUITS AND WHITE CHOCOLATE


You will need:

  • 1 cup oatmeal

  • Rice/oat/almond milk

  • ½ cup frozen forest fruits (or blueberries or raspberries)

  • 1 bar of white chocolate

  • (Dry coconut)

Preparation: Mix rice milk and oatmeal, and warm it up on the stove. Add frozen fruits and white chocolate almost immediately so the fruits thaw and chocolate melts. Put it in a bowl, add sliced banana on top and sprinkle with some oats or dry coconut.



2. GREEK YOGHURT WITH FRUIT AND GRANOLA


You will need:

  • Greek yogurt

  • Fresh fruit (I usually take apples, strawberries or blueberries but it works with any fruit, really)

  • 1 cup granola

  • (Dates and/or nuts)

Preparation: Put the yogurt in a bowl. Slice fresh fruits and put them on top. Add some granola, dates, and nuts, or anything else you would like.



3. OATMEAL PANCAKES


You will need:

  • 1 egg

  • 1 banana

  • 1 tbsp flour

  • Oats

  • Vanilla extract

  • Maple syrup

  • Fresh fruits

  • Vegetable oil

Preparation: Whisk the egg in one bowl and mash the banana in another one. Add flour, mashed banana, and one teaspoon of vanilla extract to whisked egg and stir. Mix thoroughly with oats. Heat the frying pan and add a few drops of vegetable oil before pouring pancake batter. Put one on top of the other on a plate and decorate with some fresh fruits and the delicious maple syrup.



4. SMOOTHIE BOWL


You will need:

  • 1 banana

  • Tropical fruits (mango, papaya, pineapple)

  • 1 apple

  • 1/3 cup yoghurt

  • ½ cup milk (or rice milk)

  • Dates

  • Granola

  • Nut butter (if possible use 100% nut butter)

Preparation: Peel the apple, slice it, and put it in a blender. Add sliced banana, tropical fruits, yogurt, and milk. Mix well. If you like, you can leave half a banana to put it on top. Put your smoothie in a bowl, add granola, dates and nut butter on top.



5. FRENCH TOAST WITH FRESH FRUIT


You will need:

  • 2 eggs

  • 2-3 pieces of whole wheat toast (or old bread)

  • 1/3 cup milk

  • Fresh fruits (apples, bananas, grapes, strawberries and/or peaches)

  • Maple syrup

  • Vegetable oil

Preparation: Whisk the eggs and mix with milk. If you like your breakfast sweet, add some powdered sugar. Heat the lightly oiled frying pan. Soak toast bread in eggs and fry it in oil. After frying toast on both sides put it on a plate, add fresh fruit, and maple syrup as you like.



6. AVOCADO TOAST WITH EGGS


You will need:

  • Whole wheat toast

  • Avocado

  • 1-2 eggs

  • Philadelphia cream spread

  • Salt

Preparation: Bake the toast, peel and cut avocado (watch here how). Boil eggs or make them sunny-side up. Spread Philadephia cream cheese on toast, add eggs, and sliced avocado. Sprinkle the avocado and eggs with salt.



7. SPELT CREPES WITH FRUIT


You will need:

  • 2 eggs

  • Spelt flour

  • 2 cups milk

  • 1 pack vanilla sugar

  • Cinnamon

  • Vegetable oil

  • Fresh fruit (bananas and strawberries)

  • Nutella or jam

Preparation: whisk the eggs and add spelt flour and milk. Add the perfect amount of spelt flour so the dough gets medium liquid. Add vanilla sugar and cinnamon and mix thoroughly. Heat a few drops of vegetable oil on a frying pan and pour in the crepes batter. Brown on both sides. You can make the crepes thinner or thicker based on your personal preferences (for thinner crepes the batter should be somewhat more flowing). Spread Nutella or jam on top and add some fresh fruit. Fold the crepe and voilá!



8. OATMEAL WITH APPLES, CINNAMON, AND PEANUT BUTTER


You will need:

  • 1 cup oatmeal

  • Rice/oat/almond milk

  • 1 apple

  • Cinnamon

  • Vanilla extract

  • Peanut butter (I use 100% peanut butter for the best taste)

  • Dark chocolate

Preparation: Cut unpeeled apples in pieces and bake them for 20 minutes (180°C or 350°F). Mix rice milk and oatmeal, and warm it up on the stove. Add a few drops of vanilla extract and a dash of cinnamon. When it starts boiling, put it in a bowl. Top with baked apples and make your breakfast perfect with some peanut butter and pieces of dark chocolate on top.



9. PANCAKES WITH FRUIT


You will need:

  • 1 cup flour

  • 2 tsp baking powder

  • Salt

  • 1 cup milk

  • 1 egg

  • 2 tbsp butter

  • Fresh fruit (strawberries, blueberries, bananas and/or grapes)

  • Maple syrup

  • (1 tsp brown sugar)

Preparation: In a large bowl, sift together the flour, salt, baking powder, and, if you like, sugar. Separate the eggs. Make a well in the center and pour in the milk, melted butter and egg yolk; mix until smooth. Whip the egg white in a separate bowl until it becomes creamy with stiff peaks. Add the whipped egg white into the mixture and stir carefully with a spoon. Heat a lightly oiled frying pan and pour the batter onto the pan. Brown on both sides and serve hot. Use fresh fruit and maple syrup on top to make it exceptionally delicious.



10. DALGONA COFFEE


Okay, this one is not actually a separate breakfast idea but I LOVE to have coffee with breakfast! As Dalgona coffee exploded over the internet I decided to include it to top off your breakfast.


You will need:

  • 1 tbsp instant coffee

  • 1 tsp brown sugar

  • 1 tbsp warm water

  • Ice

  • Milk

  • Cocoa

Preparation: Mix coffee, sugar, and water. Whisk until mixture turns silky smooth and shiny and continue whisking until it thickens into a foamy shape. Fill a glass with some ice and milk and swirl the whipped coffee mixture on top. Sprinkle with cocoa. Mix before drinking.
